- 2 large eggs, separated
- 2 cups buttermilk
- 1/3 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- Whisk together the egg yolks, buttermilk, vegetable oil (or melted butter), and vanilla extract in another bowl.
- Pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Beat the egg whites on medium-high speed until stiff peaks form in a clean, dry bowl.
- Fold the beaten egg whites into the batter gently.
- Grease the waffle iron lightly with cooking spray or oil.
- Pour the recommended amount of batter onto the hot waffle iron and spread it evenly.
- Cook until the waffles are golden brown and crisp—about 4 to 6 minutes.
- Remove the waffles and keep them warm in a single layer on a baking sheet in a low-temperature oven.
- Repeat with the remaining batter.
Notes
Serve with whipped cream, fresh berries, and maple syrup for a classic treat. Waffles can be frozen for longer storage.
