Instructions
- Brown the beef: Heat a skillet over medium heat. Add the ground beef and cook until it’s fully browned. Don’t forget to drain any excess fat from the pan to keep your chimichangas crisp.
- Add flavor: Stir in the refried beans, chili powder, cumin, salt, and pepper. Mix everything well, then remove from heat.
- Assemble the chimichangas: Lay a large tortilla flat and place a tablespoon of the beef mixture in the center, topped with a sprinkle of cheese. Fold in the sides and roll tightly to form a chimichanga. Repeat this process for all tortillas.
- Fry: Heat vegetable oil in a large skillet or deep fryer over medium-high heat. Carefully place the chimichangas in the hot oil, turning occasionally until they turn golden brown and crispy on all sides.
- Drain and serve: Remove the chimichangas from the oil and let them drain on paper towels. Serve them hot with salsa or sour cream for dipping.
