A crunchy, satisfying low-carb snack that won’t break your keto diet. These crispy baked zucchini fries come with an optional homemade Cajun aioli for a zesty twist.


Ingredients

  • 3 medium zucchinis
  • 2 egg whites (mixed with 1 teaspoon Cajun seasoning)
  • 1 cup Parmesan cheese (mixed with 1 tablespoon Cajun seasoning)
  • 1/2 cup mayo
  • 2 tablespoons heavy cream
  • 2 tablespoons lemon juice
  • 1 tablespoon Cajun seasoning
  • 2 egg yolks (beaten)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Slice the zucchinis into fry-shaped pieces, roughly 1/4 inch thick.
  3. Whisk together the egg whites and Cajun seasoning in a bowl until well blended.
  4. Combine Parmesan cheese and the remaining Cajun seasoning in a separate bowl.
  5. Dip each zucchini piece into the egg white mixture, then coat it with the Parmesan mixture, ensuring they’re evenly covered.
  6. Arrange the zucchini fries on the baking sheet in a single layer, making sure they aren’t touching.
  7. Bake for about 20-25 minutes or until golden brown and crispy.
  8. Prepare the Cajun aioli by combining mayo, heavy cream, lemon juice, Cajun seasoning, and beaten egg yolks in a bowl and stirring until smooth.
  9. Serve the crispy fries right from the oven, paired with that delicious Cajun aioli if desired.

Notes

For best results, pat the zucchini dry after slicing to remove excess moisture. Feel free to substitute Parmesan cheese with a dairy-free alternative if needed.
