- 2 lbs boneless skinless chicken breasts, cut or pounded to thin cutlets
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp olive oil
- 4 cloves garlic, pressed
- 28 oz crushed tomatoes (1 can)
- 1 tbsp Italian seasoning (dried)
- 1/2 tsp salt
- 1/2 cup heavy cream
- 1/4 cup parmesan cheese
- 1/3 cup fresh basil, chopped
Instructions
- Season the chicken breasts with garlic powder, salt, and pepper.
- In a large skillet, heat olive oil over medium heat. Add the seasoned chicken cutlets and cook until golden brown, about 5-6 minutes per side. Remove the chicken and set aside.
- In the same skillet, add the pressed garlic and sauté for about 30 seconds until fragrant.
- Pour in the crushed tomatoes, stir in the Italian seasoning, and add the extra salt. Let it simmer for about 5-7 minutes.
- Reduce the heat and return the chicken to the skillet. Pour in the heavy cream and sprinkle the parmesan cheese, stirring until the sauce is creamy and well combined.
- Finally, fold in the fresh basil and cook for an additional minute. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for up to 2 months, though the cream sauce may separate upon thawing.
