Description

A quick and flavorful dish featuring tender chicken in a creamy tomato basil sauce, perfect for busy weeknights.


Ingredients

  • 2 lbs boneless skinless chicken breasts, cut or pounded to thin cutlets
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil
  • 4 cloves garlic, pressed
  • 28 oz crushed tomatoes (1 can)
  • 1 tbsp Italian seasoning (dried)
  • 1/2 tsp salt
  • 1/2 cup heavy cream
  • 1/4 cup parmesan cheese
  • 1/3 cup fresh basil, chopped

Instructions

  1. Season the chicken breasts with garlic powder, salt, and pepper.
  2. In a large skillet, heat olive oil over medium heat. Add the seasoned chicken cutlets and cook until golden brown, about 5-6 minutes per side. Remove the chicken and set aside.
  3. In the same skillet, add the pressed garlic and sauté for about 30 seconds until fragrant.
  4. Pour in the crushed tomatoes, stir in the Italian seasoning, and add the extra salt. Let it simmer for about 5-7 minutes.
  5. Reduce the heat and return the chicken to the skillet. Pour in the heavy cream and sprinkle the parmesan cheese, stirring until the sauce is creamy and well combined.
  6. Finally, fold in the fresh basil and cook for an additional minute. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for up to 2 months, though the cream sauce may separate upon thawing.
