Description

A warm, creamy lasagna layered with earthy mushrooms, vibrant spinach, rich ricotta, and gooey mozzarella, perfect for family dinners or entertaining guests.


Ingredients

  • Lasagna noodles
  • Spinach (fresh or frozen)
  • Mushrooms (sliced)
  • Ricotta cheese
  • Mozzarella cheese (shredded)
  • White sauce (homemade or store-bought)
  • Salt
  • Pepper
  • Olive oil
  • Garlic (minced)
  • Onion (chopped)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a splash of olive oil over medium heat in a skillet. Add chopped onions and minced garlic, and sauté until fragrant.
  3. Stir in the sliced mushrooms and cook until they’re softened. Then, add the spinach and cook until it wilts down.
  4. Mix the ricotta cheese with a sprinkle of salt and pepper in a bowl.
  5. Spread a layer of white sauce in a baking dish, then layer with lasagna noodles.
  6. Add a layer of the spinach and mushroom mixture, followed by the ricotta mix, and sprinkle with mozzarella cheese.
  7. Repeat these layers until all ingredients are used, finishing with a generous layer of mozzarella on top.
  8. Cover with aluminum foil and bake for 25 minutes. After that, remove the foil and bake for another 15 minutes, or until it bubbles and turns golden brown.
  9. Allow to cool for a few moments before serving.

Notes

For added flavor, consider sautéing mushrooms in balsamic vinegar or adding a pinch of nutmeg to the white sauce.
