Ingredients
- Lasagna noodles
- Spinach (fresh or frozen)
- Mushrooms (sliced)
- Ricotta cheese
- Mozzarella cheese (shredded)
- White sauce (homemade or store-bought)
- Salt
- Pepper
- Olive oil
- Garlic (minced)
- Onion (chopped)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a splash of olive oil over medium heat in a skillet. Add chopped onions and minced garlic, and sauté until fragrant.
- Stir in the sliced mushrooms and cook until they’re softened. Then, add the spinach and cook until it wilts down.
- Mix the ricotta cheese with a sprinkle of salt and pepper in a bowl.
- Spread a layer of white sauce in a baking dish, then layer with lasagna noodles.
- Add a layer of the spinach and mushroom mixture, followed by the ricotta mix, and sprinkle with mozzarella cheese.
- Repeat these layers until all ingredients are used, finishing with a generous layer of mozzarella on top.
- Cover with aluminum foil and bake for 25 minutes. After that, remove the foil and bake for another 15 minutes, or until it bubbles and turns golden brown.
- Allow to cool for a few moments before serving.
Notes
For added flavor, consider sautéing mushrooms in balsamic vinegar or adding a pinch of nutmeg to the white sauce.
