Ingredients

  • 1 lb sausage (Italian or your choice)
  • 1 package tortellini (fresh or frozen)
  • 2 cups kale (chopped)
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic; sauté until translucent and fragrant.
  3. Crumble the sausage into the pot, cooking until browned, about 5-7 minutes.
  4. Pour in the broth, bringing the mixture to a simmer.
  5. Add the tortellini and chopped kale, cooking until the tortellini is tender, around 5-7 minutes.
  6. Lower the heat and stir in the heavy cream and Italian seasoning. Season with salt and pepper to taste.
  7. Allow the soup to simmer for an additional 2-3 minutes before serving.
