Description

Ingredients

  • 1 cup heavy cream
  • 1 bulb garlic, roasted
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 1 pound pasta of your choice
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C), wrap the bulb of garlic in aluminum foil and roast for about 30-35 minutes.
  2. Cook the pasta in salted boiling water according to package instructions until al dente, reserving 1 cup of pasta water before draining.
  3. Heat the olive oil in a medium saucepan over medium heat and mash the roasted garlic into a smooth paste.
  4. Add the heavy cream and stir, allowing it to heat for 3-4 minutes without boiling.
  5. Mix in the lemon juice and zest, seasoning with salt and black pepper; let cook for another 2 minutes.
  6. Incorporate the grated Parmesan cheese, stirring until melted and combined.
  7. Combine the cooked pasta with the sauce, adding reserved pasta water if necessary to reach the desired consistency.
  8. Garnish with fresh parsley and serve immediately.
