- 1 bulb garlic, roasted
- 1 tablespoon olive oil
- 2 tablespoons lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup grated Parmesan cheese
- 1 pound pasta of your choice
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C), wrap the bulb of garlic in aluminum foil and roast for about 30-35 minutes.
- Cook the pasta in salted boiling water according to package instructions until al dente, reserving 1 cup of pasta water before draining.
- Heat the olive oil in a medium saucepan over medium heat and mash the roasted garlic into a smooth paste.
- Add the heavy cream and stir, allowing it to heat for 3-4 minutes without boiling.
- Mix in the lemon juice and zest, seasoning with salt and black pepper; let cook for another 2 minutes.
- Incorporate the grated Parmesan cheese, stirring until melted and combined.
- Combine the cooked pasta with the sauce, adding reserved pasta water if necessary to reach the desired consistency.
- Garnish with fresh parsley and serve immediately.
