Ingredients

  • 1 lb chicken breast or thighs
  • 2 tbsp jerk seasoning
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 8 oz penne or gluten-free pasta
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream or coconut cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley or green onions for garnish

Instructions

  1. Cook the Pasta: Start by boiling water and cooking the pasta according to the package instructions. Drain it and set aside.
  2. Season the Chicken: Rub jerk seasoning all over the chicken pieces to infuse flavor.
  3. Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Cook the chicken for about 5–6 minutes per side until it’s cooked through and has a nice golden crust. Remove it from the skillet and let it rest, then slice it.
  4. Sauté the Veggies: In the same skillet, melt the butter and add minced garlic and sliced bell peppers. Sauté them for about 3–4 minutes, letting them soften a bit.
  5. Create the Sauce: Reduce the heat and pour in the cream. Add grated Parmesan, shredded mozzarella, salt, and pepper, stirring until the cheese is melted and the sauce is rich and creamy.
  6. Combine with Pasta: Toss the cooked pasta into the sauce, mixing until it’s well-coated.
  7. Top and Serve: Layer the sliced jerk chicken on top of the pasta and garnish with fresh parsley or green onions for a pop of color. Serve hot and enjoy!

Notes

For a lighter option, coconut cream is a great dairy substitute. Ensure chicken is cooked thoroughly with a meat thermometer to reach an internal temperature of 165°F (75°C).
