Description

A comforting dish of creamy mushroom pasta that’s quick, easy, and budget-friendly, perfect for busy weeknights.

Ingredients

Scale
  • 8 ounces pasta of choice (spaghetti, fettuccine, or penne)
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 8 ounces mushrooms, sliced (button or cremini)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Begin by cooking the pasta according to package instructions. Once cooked, drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it turns translucent.
  3. Next, toss in the minced garlic and sliced mushrooms. Cook until the mushrooms are browned, about 5-7 minutes.
  4. Pour in the heavy cream, stirring well, and bring it to a gentle simmer.
  5. Once simmering, stir in the grated Parmesan cheese and let it melt into the sauce.
  6. Season your sauce with salt and pepper to taste.
  7. Toss your cooked pasta in the sauce until it’s evenly coated.
  8. Finally, serve warm, garnished with fresh parsley.

Notes

Try adding cooked chicken or shrimp for added protein, or spinach for extra nutrition.
