Description

A delightful blend of creamy, earthy, and umami flavors that combines classic Italian techniques with a Japanese twist, perfect for a cozy dinner or special gathering.

Ingredients

  • Pasta of choice
  • Miso paste (white or red)
  • Cream (heavy or half-and-half)
  • Parmesan cheese (freshly grated)
  • Fresh herbs (parsley or basil)
  • Lemon juice
  • Mushrooms (shiitake, cremini, or button)
  • Olive oil
  • Salt and pepper

Instructions

  1. Cook the Pasta: Prepare the pasta according to package instructions until al dente. Once cooked, drain and set aside.
  2. Sauté the Mushrooms: Heat a splash of olive oil in a large pan over medium heat. Add sliced mushrooms and cook until golden brown, about 5-7 minutes.
  3. Make the Miso Sauce: In a separate bowl, blend miso paste, cream, and lemon juice until smooth.
  4. Combine Everything: Pour the miso sauce over the cooked mushrooms in the pan. Add the pasta, tossing gently to coat.
  5. Finish with Cheese and Herbs: Stir in grated parmesan cheese and fresh herbs. Adjust seasoning with salt and pepper.
  6. Serve Warm: Plate while warm, garnished with more herbs and cheese if desired.

Notes

For a vegan alternative, use non-dairy cream and omit the parmesan or substitute with vegan cheese.
