  • 8 oz elbow macaroni
  • 2 cups broccoli florets
  • 2 tablespoons butter

Instructions

  1. Begin by cooking the elbow macaroni as per package instructions. Two to three minutes before it’s done, toss in the broccoli florets. This will allow the broccoli to become tender while holding its vibrant color. Drain the mix and set aside.
  2. In a medium saucepan, melt the butter over medium heat. Once melted, stir in the flour and cook for one minute to form a roux.
  3. Gradually whisk in the milk. Keep stirring until the mixture thickens and begins to bubble.
  4. Remove from heat and stir in the shredded cheddar cheese until fully melted and smooth.
  5. Finally, combine the cheese sauce with the cooked macaroni and broccoli. Season with salt and pepper to taste, and serve warm.
