- 2 chicken breasts, cooked and diced
- 8 ounces fettuccine
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons chipotle in adobo sauce
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Start by cooking the fettuccine according to the package instructions. Once done, drain the pasta and set it aside.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until it becomes fragrant.
- Pour in the heavy cream and the chipotle in adobo sauce. Stir together and bring to a gentle simmer.
- Add the diced chicken and grated Parmesan cheese to the skillet. Mix well until everything is combined, and season with salt and pepper to your taste.
- Toss the cooked fettuccine into the sauce, ensuring it’s evenly coated and heated through.
- Serve hot and garnish with freshly chopped cilantro for a pop of color and flavor.
Notes
For a lighter version, use half-and-half instead of heavy cream. You can also switch out fettuccine for any pasta you have on hand.
