Ingredients

  • 2 chicken breasts, cooked and diced
  • 8 ounces fettuccine
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons chipotle in adobo sauce
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Start by cooking the fettuccine according to the package instructions. Once done, drain the pasta and set it aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until it becomes fragrant.
  3. Pour in the heavy cream and the chipotle in adobo sauce. Stir together and bring to a gentle simmer.
  4. Add the diced chicken and grated Parmesan cheese to the skillet. Mix well until everything is combined, and season with salt and pepper to your taste.
  5. Toss the cooked fettuccine into the sauce, ensuring it’s evenly coated and heated through.
  6. Serve hot and garnish with freshly chopped cilantro for a pop of color and flavor.

Notes

For a lighter version, use half-and-half instead of heavy cream. You can also switch out fettuccine for any pasta you have on hand.
