Description

A comforting and quick meal featuring tender chicken, earthy mushrooms, and vibrant spinach in a luxurious cream sauce.


Ingredients

  • 1 lb chicken breast, diced
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced chicken, seasoning it with salt and pepper. Cook until it’s lightly browned and no longer pink in the center.
  3. Toss in the minced garlic and sliced mushrooms. Cook until the mushrooms are tender and release their juices.
  4. Stir in the fresh spinach and continue cooking until it wilts down.
  5. Pour in the heavy cream and mix everything together. Let it simmer for a couple of minutes.
  6. Stir in the grated Parmesan cheese until melted and the sauce turns creamy and luscious.
  7. Enjoy your dish over rice, mashed potatoes, or pasta of choice.
