Description

A comforting dish of creamy creamed corn mixed with tender orzo and flaky salmon, perfect for weeknight dinners or family brunch.


Ingredients

Scale
  • 1 cup orzo pasta
  • 2 cups creamed corn
  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • 1 cup cooked salmon, flaked
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the orzo pasta according to package instructions until al dente. Drain and set aside.
  2. Melt the butter in a large skillet over medium heat.
  3. Stir in the creamed corn and heavy cream until well combined.
  4. Add the cooked orzo to the skillet and stir to coat it in the creamy mixture.
  5. Fold in the flaked salmon and season with salt and pepper to taste.
  6. Cook everything together for an additional 2-3 minutes until heated through.
  7. Serve hot, garnished with chopped parsley.

Notes

For a lighter version, substitute heavy cream with half-and-half or milk. Store leftovers in the refrigerator for up to 3 days.
