- 2 cups (300 g) whole kernel corn, drained
- 1 cup (240 g) cream-style corn
- 4 oz (115 g) cream cheese, softened and cubed
- ¼ cup (60 g) unsalted butter, melted
- ½ cup (120 ml) whole milk
- 1 large egg
- ½ cup (65 g) all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup (50 g) shredded cheddar cheese (optional, for topping)
Instructions
- Preheat the oven to 180°C (350°F) and lightly grease a medium baking dish.
- Whisk together the melted butter, milk, egg, and cream cheese until mostly smooth.
- Stir in the whole kernel corn and cream-style corn.
- Add the flour, sugar, baking powder, salt, and pepper. Mix just until combined.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Sprinkle shredded cheddar cheese on top, if desired.
- Bake for 40–45 minutes, or until the center is set and the top is lightly golden.
- Let it rest for 5–10 minutes before serving.
