Description

A creamy and sweet corn casserole that’s a perfect comfort dish for family gatherings and weeknight dinners.


Ingredients

  • 2 cups (300 g) whole kernel corn, drained
  • 1 cup (240 g) cream-style corn
  • 4 oz (115 g) cream cheese, softened and cubed
  • ¼ cup (60 g) unsalted butter, melted
  • ½ cup (120 ml) whole milk
  • 1 large egg
  • ½ cup (65 g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup (50 g) shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat the oven to 180°C (350°F) and lightly grease a medium baking dish.
  2. Whisk together the melted butter, milk, egg, and cream cheese until mostly smooth.
  3. Stir in the whole kernel corn and cream-style corn.
  4. Add the flour, sugar, baking powder, salt, and pepper. Mix just until combined.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Sprinkle shredded cheddar cheese on top, if desired.
  7. Bake for 40–45 minutes, or until the center is set and the top is lightly golden.
  8. Let it rest for 5–10 minutes before serving.
