- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup butter, softened
- 1 cup fresh cranberries, chopped
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup orange juice
- 1 tablespoon grated orange zest
- 1/2 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons orange juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Combine flour, baking powder, baking soda, and salt in a mixing bowl.
- Cream the butter and sugar together until light and fluffy, then beat in the eggs, orange juice, orange zest, and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the chopped cranberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 60-70 minutes or until a toothpick inserted comes out clean.
- Whisk powdered sugar with orange juice for the glaze.
- Drizzle the glaze over the cooled loaf and slice to serve.
Notes
For a twist, add a pinch of cinnamon or nutmeg, or mix in walnuts or pecans for extra crunch.
