Description

A delightful roast chicken recipe glazed with sweet cranberry and maple flavors, perfect for any occasion.


Ingredients

  • 1 whole chicken (about 45 pounds)
  • 1 cup cranberry juice
  • 1/2 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh rosemary or thyme for garnish

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Whisk together the cranberry juice, maple syrup, Dijon mustard, minced garlic, salt, and pepper to create the luscious glaze.
  3. Season the chicken by placing it in a roasting pan and rubbing salt and pepper inside and out.
  4. Brush the glaze all over the chicken, making sure to reserve some for basting later.
  5. Roast the chicken in the preheated oven for about 90 minutes, or until it reaches an internal temperature of 165ยฐF (75ยฐC). Remember to baste with the reserved glaze every 30 minutes!
  6. Remove the chicken from the oven and let it rest for 10 minutes before carving.
  7. Garnish with fresh rosemary or thyme and serve!

Notes

For crispy skin, increase the oven temperature to 425ยฐF (220ยฐC) for the last 15-20 minutes. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
