Description

A comforting and quick pasta dish enhanced by creamy cottage cheese and fresh spinach, perfect for busy weeknights or lazy weekends.

Ingredients

  • Pasta (your choice: spaghetti, penne, or fusilli)
  • Cottage cheese
  • Olive oil
  • Garlic (minced)
  • Spinach (fresh or frozen)
  • Salt
  • Pepper
  • Parmesan cheese (optional)
  • Fresh herbs (like basil or parsley, optional)

Instructions

  1. Cook the pasta according to package instructions. Once done, drain it and set it aside.
  2. Heat a generous splash of olive oil in a large pan over medium heat. Once hot, toss in the minced garlic and sauté until fragrant.
  3. Add the spinach to the pan and cook until it wilts or toss in frozen spinach and heat through.
  4. Stir in the cottage cheese and cooked pasta, ensuring everything is well combined.
  5. Season with salt and pepper to your liking.
  6. Top with grated Parmesan cheese and fresh herbs before serving warm.

Notes

For a richer taste, consider sautéing garlic in butter along with olive oil. Reserve some pasta water for a creamier sauce if desired.
