Description
Deliciously healthy pancake bites made with cottage cheese, bananas, and oats, perfect for breakfast or a snack.
Ingredients

- 1 ripe banana, mashed
- 1/2 cup (120g) cottage cheese
- 1/2 cup (50g) rolled oats
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (1g) cinnamon
- 1/2 tsp (2g) baking powder
- 1/4 tsp (1.5g) salt
- 1/4 cup (45g) mini chocolate chips (optional)
- Cooking spray or butter for greasing the muffin tin
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin thoroughly.
- Combine the mashed banana, cottage cheese, rolled oats, eggs, vanilla extract, cinnamon, baking powder, and salt in a blender. Blend until you achieve a smooth batter.
- If you’re adding mini chocolate chips, stir them in now.
- Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the oven for 12–15 minutes or until the bites are golden brown and puffed up.
- Allow to cool for 5 minutes before gently removing from the tin and serving.
Notes
Feel free to substitute cottage cheese with Greek yogurt or a non-dairy yogurt alternative.
