Description

This dessert combines the richness of tres leches cake with the irresistible flavor of cookie butter, creating a moist and flavorful treat perfect for any occasion.


Ingredients

  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup cookie butter
  • 1 cup whole milk
  • 1/2 cup sweetened condensed milk
  • 1/2 cup evaporated milk
  • 1/2 tsp ground cinnamon
  • Whipped cream (for topping)
  • Extra cookie butter (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter with sugar until it’s light and fluffy.
  4. Add eggs, one at a time, beating well. Mix in the vanilla extract.
  5. Gradually add the dry ingredients into the butter mixture, alternating with the milk. Mix just until combined.
  6. Pour the batter into your greased baking pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool completely in the pan on a wire rack.
  9. Once cooled, use a skewer to poke holes all over the cake’s surface.
  10. In a separate bowl, whisk together whole milk, sweetened condensed milk, evaporated milk, cookie butter, and cinnamon.
  11. Pour the milk mixture over the cake, allowing it to soak in fully.
  12. Cover and refrigerate for at least 2 hours before serving.
  13. Serve topped with whipped cream and a drizzle of extra cookie butter.

This cake can be made ahead of time and stores well in the refrigerator for 3-5 days. For best results, avoid topping with whipped cream until ready to serve.
