Description

Ingredients

  • 2 cups brewed coffee (freshly brewed is ideal)
  • 1 cup milk (dairy-free options like almond or oat milk can be used)
  • 3/4 cup sugar
  • 3 large eggs
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • Whipped cream (for garnish)
  • Cocoa powder (for garnish)

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC).
  2. Combine the brewed coffee, milk, and sugar in a saucepan over medium heat until warm.
  3. Whisk together the eggs and cornstarch in a separate bowl until smooth.
  4. Gradually whisk the warmed coffee mixture into the egg mixture to temper the eggs.
  5. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened, about 5-7 minutes.
  6. Stir in the vanilla extract.
  7. Pour the custard filling into the pre-baked chocolate pastry crust.
  8. Bake for 20-25 minutes or until the filling is set.
  9. Cool completely, then garnish with whipped cream and cocoa powder before serving.
