Description

Delicious coffee-infused cookies topped with rich mocha buttercream frosting, perfect for any occasion.


Ingredients

  • 1 cup Butter (Salted, Sweet Cream, Softened to Room Temperature)
  • 2 cups Powdered Sugar
  • 2 Large Eggs
  • 2 tablespoons Instant Coffee dissolved in 1/4 cup water
  • 1 1/2 tablespoons Half n’ Half
  • 3 1/2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 batch of The Best Mocha Buttercream Frosting
  • 1/4 cup melted Chocolate Chips

Instructions

  1. Cream the softened butter and powdered sugar together for about 3 minutes until light and fluffy.
  2. Add in the large eggs, mixing for an additional 3 minutes.
  3. Incorporate the dissolved instant coffee and half n’ half, mixing until well combined.
  4. Gradually add in the baking soda and salt, mixing thoroughly.
  5. Mix in the all-purpose flour until just combined.
  6. Refrigerate the dough for about 30 minutes.
  7. Roll the dough into balls and slightly flatten them on your baking sheet.
  8. Bake in an oven preheated to 350°F for 9-10 minutes.
  9. Cool the cookies on a wire rack before frosting.
  10. Drizzle the tops with melted chocolate chips for garnish.

Notes

Best served with a hot cup of coffee or a glass of cold milk. Store in an airtight container at room temperature for up to a week.
