Description

A delightful fusion of flavors, these Coconut Gochujang Chicken Meatballs are quick to prepare and perfect for weeknight dinners or family gatherings.


Ingredients

  • 1 pound ground chicken
  • 1 tbsp low sodium soy sauce
  • 1 egg yolk
  • 2 tbsp breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tbsp vegetable oil
  • ยฝ tbsp unsalted butter
  • 4 garlic cloves (grated)
  • 1 tbsp grated ginger
  • 1 tsp salt
  • ยฝ tsp ground cumin
  • ยฝ tsp turmeric
  • ยฝ cup chicken broth
  • 2 tbsp low sodium soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp honey
  • 2 tbsp gochujang paste (adjust to taste)
  • 1 can (400ml/14 oz) unsweetened coconut milk (full fat)
  • 2 tbsp lime juice
  • 1 broccoli (cut into small pieces)
  • Cilantro leaves (for serving)

Instructions

  1. Prep Ingredients: Chop the broccoli into small florets and grate your ginger and garlic. This makes cooking a breeze.
  2. Make Meatballs: In a large bowl, mix ground chicken with soy sauce, egg yolk, breadcrumbs, garlic powder, and black pepper. Use your hands to combine gently. Roll the mix into 2-tablespoon sized balls to form about 20 meatballs.
  3. Brown Meatballs: Heat vegetable oil and butter in a nonstick skillet over medium heat. Add the meatballs, turning them until browned on all sides, which should take around 8 minutes. Once browned, remove them from the skillet.
  4. Flavor Base: Lower the heat, add grated garlic and ginger, and sautรฉ for about a minute. Sprinkle in salt, black pepper, cumin, and turmeric. Stir for about a minute until fragrant.
  5. Create Sauce: Raise the heat back to medium, add the chicken broth, and simmer for 2 minutes, scraping up any brown bits. Stir in soy sauce, fish sauce, honey, and gochujang until evenly mixed. Pour in the full-fat coconut milk and lime juice. Bring to a simmer.
  6. Simmer Meatballs and Broccoli: Add the broccoli pieces and browned meatballs back into the sauce. Let them simmer together over medium heat for around 10 minutes until the meatballs are fully cooked through.

Notes

Adjust gochujang to taste for desired spice level. Serve with rice or quinoa and garnish with fresh cilantro.
