Description

A light and luscious cake infused with coconut flavor, topped with creamy frosting and shredded coconut for a heavenly dessert experience.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and lining with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. Beat the softened butter and granulated sugar together until fluffy, about 3-5 minutes.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Stir in the vanilla and coconut extracts.
  6. Gradually alternate adding the dry ingredients and coconut milk into the butter mixture, starting and ending with dry ingredients.
  7. Pour the batter evenly into the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for about 10 minutes, then turn them out onto wire racks to cool completely.
  10. Beat the cream cheese and powdered sugar together in a bowl until smooth for the frosting.
  11. Whip the heavy cream in a separate bowl until stiff peaks form, then gently fold into the cream cheese mixture.
  12. Layer the cakes with frosting in between, and frost the top and sides.
  13. Press the shredded coconut onto the frosted cake.
  14. Chill in the refrigerator for at least 1 hour before serving.

Notes

Best served chilled with mint garnish and pairs well with tropical fruit salad or vanilla ice cream. Store leftovers in an airtight container for up to 3-5 days in the fridge.
