- 1 teaspoon baking powder
- 1 teaspoon baking soda

- 1/2 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 cup pumpkin puree (canned or fresh)
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract (for frosting)
- 1/4 cup chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 375°F (190°C). Grease and line a baking sheet (15×10-inch) with parchment paper.
- Combine flour, baking powder, baking soda, cinnamon, ground cloves, and salt in a medium mixing bowl.
- Beat the eggs and granulated sugar until fluffy in a separate large bowl. Mix in pumpkin puree and vanilla until well incorporated.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Spread the batter evenly onto the prepared baking sheet.
- Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
- Flip the cake onto a clean kitchen towel dusted with powdered sugar. Roll it up in the towel and let it cool completely.
- Whip together the softened cream cheese, powdered sugar, and vanilla extract until smooth for the frosting.
- Unroll the cooled cake gently, spread the cream cheese frosting evenly, and roll it back up.
- Chill in the refrigerator for at least one hour to set. If desired, garnish with chopped nuts before serving.
Notes
Store leftovers tightly wrapped in plastic wrap or in an airtight container in the refrigerator for up to a week. Can freeze slices for up to three months.
