Description

A comforting and delicious sweet potato bread with warm spices, perfect for gatherings or a solo snack.


Ingredients

  • 1 cup mashed sweet potatoes
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with non-stick spray.
  2. In a large mixing bowl, combine the mashed sweet potatoes, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  4. Gradually add the dry mixture to the sweet potato mixture, stirring until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared loaf pan, smoothing out the top with a spatula.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely.
