- 1 cup mashed sweet potatoes
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan with non-stick spray.
- In a large mixing bowl, combine the mashed sweet potatoes, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- Gradually add the dry mixture to the sweet potato mixture, stirring until just combined. Be careful not to overmix.
- Pour the batter into the prepared loaf pan, smoothing out the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely.
