- 1/4 cup refined coconut oil
- 3 tbsp pure maple syrup
- 2 tsp ground cinnamon
- 1 tsp vanilla extract
- 2 cups rolled oats
- 1 tbsp light brown sugar
- 1/3 cup raisins
- A pinch of salt
Instructions
- Preheat your oven to 325 degrees F (165 degrees C).
- Combine coconut oil, maple syrup, ground cinnamon, vanilla extract, and a pinch of salt in a saucepan over low heat. Stir until melted and smooth.
- Add the rolled oats to a large mixing bowl.
- Pour the melted mixture over the oats and mix until fully coated.
- Line a baking tray with parchment paper and spread the granola mixture evenly and thinly.
- Sprinkle light brown sugar and more cinnamon on top.
- Bake in the oven for about 20 minutes.
- Remove from the oven and allow the granola to cool completely before breaking into chunks.
- Mix in the raisins and enjoy!
Notes
For variations, try adding nuts, seeds, or different dried fruits. Store in an airtight container to keep it fresh.
