  2. Whisk the buttermilk, egg, and melted butter together in another bowl until smooth.
  3. Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  4. Fold in the diced peaches with a gentle hand, ensuring they’re evenly distributed.
  5. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking oil.
  6. Pour about 1/4 cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface, about 2-3 minutes.
