Instructions

- Whisk the buttermilk, egg, and melted butter together in another bowl until smooth.
- Pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Fold in the diced peaches with a gentle hand, ensuring they’re evenly distributed.
- Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking oil.
- Pour about 1/4 cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for an additional 2 minutes, or until golden brown.
