Description

Delicious mini muffins made with ripe bananas and a hint of cinnamon, perfect for breakfast or snacks.


Ingredients

  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Combine the mashed bananas with the melted butter in one mixing bowl and stir well.
  3. Add sugar, egg, and vanilla extract to the banana mixture, mixing until smooth.
  4. Whisk together the baking soda, salt, cinnamon, and flour in a separate bowl.
  5. Fold the dry ingredients into the banana mixture, stirring gently until just combined.
  6. Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full.
  7. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes in the pan before transferring to a wire rack.

Notes

For a vegan version, substitute with a flax egg and organic sugar. You can also add chocolate chips or nuts for variation.
