Ingredients

  • 2 cups water
  • 1 cup chopped fresh cilantro
  • ½ cup lime juice
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup diced tomatoes
  • 1 cup diced cucumber
  • ½ cup diced red onion

Instructions

  1. Rinse the quinoa under cold water using a fine mesh strainer.
  2. Cook the quinoa by combining it with water in a pot. Bring to a boil, reduce heat, and let it simmer for about 15 minutes.
  3. Whisk the dressing in a large bowl with chopped cilantro, lime juice, olive oil, salt, and pepper.
  4. Fluff the cooked quinoa with a fork and add it to the bowl with the dressing.
  5. Incorporate diced tomatoes, cucumber, and red onion, tossing everything together.
