Description

Ingredients

  • 1/2 cup fresh cilantro, chopped

  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Whisk together the chopped cilantro, lime juice, olive oil, minced garlic, salt, and pepper until well combined.
  2. Add the boneless chicken thighs to the marinade, ensuring they’re evenly coated. Let them sit for at least 30 minutes in the fridge—marinating overnight is even better!
  3. Preheat your grill pan or outdoor grill to medium-high heat.
  4. Remove the chicken from the marinade, letting any excess drip off.
  5. Grill the chicken thighs for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
  7. Serve alongside rice, or use them in tacos, bowls, or salads for a delicious meal.

Notes

For a spicier flavor, add diced jalapeños to the marinade. Store leftovers in an airtight container; they will last for 3-4 days in the fridge.
