- 1/2 cup fresh cilantro, chopped

Instructions
- Whisk together the chopped cilantro, lime juice, olive oil, minced garlic, salt, and pepper until well combined.
- Add the boneless chicken thighs to the marinade, ensuring they’re evenly coated. Let them sit for at least 30 minutes in the fridge—marinating overnight is even better!
- Preheat your grill pan or outdoor grill to medium-high heat.
- Remove the chicken from the marinade, letting any excess drip off.
- Grill the chicken thighs for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
- Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
- Serve alongside rice, or use them in tacos, bowls, or salads for a delicious meal.
Notes
For a spicier flavor, add diced jalapeños to the marinade. Store leftovers in an airtight container; they will last for 3-4 days in the fridge.
