Ingredients

  • 1 1/2 teaspoons baking powder

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup shredded coconut
  • 1/2 cup butter (softened)
  • 3 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a large mixing bowl, combine the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well mixed.
  3. Add in the eggs, milk, vegetable oil, and vanilla extract. Stir until you achieve a smooth batter.
  4. Carefully mix in the boiling water, ensuring the batter is well combined and a bit thinner in consistency.
  5. Divide the batter evenly between the two prepared pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the centers comes out clean.
  7. Allow the cakes to cool in the pans for a few minutes, then transfer them to a wire rack to cool completely.
  8. For the frosting, beat together the softened butter and powdered sugar, adding milk and vanilla until your mixture is creamy and smooth.
  9. Once the cakes are completely cool, frost the top of one layer, sprinkle it with shredded coconut, then carefully place the second layer on top. Frost the top and sides of the cake generously.
  10. For an extra touch, garnish with more shredded coconut if desired. Slice and serve!
