A flavor-packed twist on a classic with sweet potatoes layered in a creamy chipotle sauce topped with smoked Gouda.
Ingredients

- 4 medium sweet potatoes
- 2 cups smoked Gouda cheese, grated
- 1/2 cup chipotle chile sauce
- 2 tablespoons butter
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon nutmeg
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and thinly slice the sweet potatoes.
- Melt the butter in a saucepan over medium heat, then add the minced garlic until fragrant.
- Stir in the heavy cream, chipotle chile sauce, salt, pepper, and nutmeg.
- Layer sweet potatoes in a greased baking dish, pouring sauce over each layer.
- Top the final layer with smoked Gouda cheese.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 15-20 minutes until tender and bubbly.
- Allow to sit for a few minutes before serving.
