Description

A flavor-packed twist on a classic with sweet potatoes layered in a creamy chipotle sauce topped with smoked Gouda.


Ingredients

  • 4 medium sweet potatoes
  • 2 cups smoked Gouda cheese, grated
  • 1/2 cup chipotle chile sauce
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes.
  3. Melt the butter in a saucepan over medium heat, then add the minced garlic until fragrant.
  4. Stir in the heavy cream, chipotle chile sauce, salt, pepper, and nutmeg.
  5. Layer sweet potatoes in a greased baking dish, pouring sauce over each layer.
  6. Top the final layer with smoked Gouda cheese.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil and bake for an additional 15-20 minutes until tender and bubbly.
  9. Allow to sit for a few minutes before serving.
