- 1 pound beef (sliced into strips)
- 2 large tomatoes (diced)
- 3 large eggs
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 tablespoon oyster sauce
- Salt and pepper to taste
- Green onions (for garnish)
Instructions
- Combine sliced beef with soy sauce and cornstarch; let marinate for 15 minutes.
- Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat.
- Add the marinated beef and stir-fry until browned, then remove and set aside.
- In the same skillet, add another tablespoon of oil and toss in the diced tomatoes; stir-fry until softened.
- Crack the eggs into a bowl, beat, and pour into the skillet with tomatoes; scramble until fully cooked.
- Return the beef to the skillet, add oyster sauce, and stir to combine. Season with salt and pepper.
- Serve hot, garnished with chopped green onions.
Notes
For a different twist, substitute beef with chicken or tofu, or add other vegetables like bell peppers or snap peas.
