Ingredients

- 1 cup farro
- 2 cups water or vegetable broth
- 1 apple, diced
- 1/4 cup chopped red onion
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Rinse the farro under cold water.
- Cook the farro in a saucepan with water or vegetable broth by bringing it to a boil, then reducing heat and covering, simmering for 30 minutes until tender.
- Mix the cooled farro with diced apple, red onion, cranberries, and walnuts in a large bowl.
- Prepare the dressing by whisking together olive oil, apple cider vinegar, salt, and pepper in a small bowl.
- Combine the dressing with the salad and toss well to mix.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
For additional flavor, toast the walnuts before adding them to the salad.
