Delicious Chicken Satay Skewers marinated and grilled, served with a creamy peanut sauce for a delightful meal.


Ingredients

  • 3 lbs Chicken Thighs
  • 3 Garlic Cloves (minced)
  • 1 1/2 tsp Red Pepper Flakes
  • 1 Small Red Onion (finely chopped)
  • 1 tsp Paprika
  • 1/4 tsp Black Pepper
  • 2 tsp Coriander
  • 2 tsp Nutmeg
  • 1 tsp Cumin
  • 1 tsp Vegetable Oil
  • 4 tbsp Soy Sauce
  • 1 tbsp Rice Vinegar
  • 1/3 cup Water
  • 2 tbsp Brown Sugar
  • 1/4 cup Onion (finely chopped)
  • 1/4 cup Peanut Butter
  • 1 tbsp Ginger (finely chopped)
  • 2 Garlic Cloves (minced)
  • 2 tbsp Oil
  • 1 Jalapeno (finely chopped)
  • 1/2 tsp Sesame Oil
  • 2 tbsp Lime Juice
  • 2 tbsp Rice Vinegar
  • 2 tbsp Soy Sauce
  • 2 tbsp Brown Sugar

Instructions

  1. Prepare the Marinade: In a blender, combine all marinade ingredients and blend until smooth. Pour half the mixture into a small saucepan and simmer over low heat for about 5 minutes, then allow it to cool completely.
  2. Marinate the Chicken: Place chicken thighs in a large storage bag and pour in the cooled marinade. Seal and shake to ensure all pieces are well-coated. Store the remaining marinade in the fridge for later. Let the chicken marinate for at least 30 minutes.
  3. Soak Skewers: If using wooden skewers, soak about 10-20 skewers in water to prevent burning while cooking.
  4. Make the Peanut Sauce: In a small saucepan, heat oil over low heat. Sautรฉ the ginger, onion, and jalapeรฑo until soft. Stir in garlic and cook for an additional minute. Add the remaining peanut sauce ingredients, cook for another 1-2 minutes, and then blend until smooth. Set aside.
  5. Grill the Chicken: Once marinated, slice the chicken into long strips. Thread about 2-3 pieces onto each skewer. Preheat the grill to medium-high heat and lightly oil it. Grill skewers for about 15 minutes, turning every 2-3 minutes or until they reach an internal temperature of 165ยฐF. Baste with the reserved marinade during the last few turns.
  6. Serve It Up: Serve skewers hot with the warm peanut sauce for dipping. Enjoy the explosion of flavors!

Notes

Feel free to swap chicken thighs for breasts if you prefer a leaner cut. For a vegetarian option, swap chicken for shrimp or tofu.
