Description

A comforting and cozy classic chicken pot pie made with golden, flaky puff pastry and a creamy filling.


Ingredients

  • 2 cups cooked chicken (shredded or diced)
  • 1 cup carrots (diced)
  • 1 cup celery (diced)
  • 1/2 cup onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 1/2 cups frozen peas
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 package of puff pastry (usually contains 2 sheets)
  • 1 egg (beaten for egg wash)

Instructions

  1. Prepare the filling: In a large skillet, melt the butter over medium heat.
  2. Add the onions, carrots, celery, and garlic. Sauté for about 5-7 minutes until they’re softened and fragrant.
  3. Sprinkle in the flour and cook for 1-2 minutes, stirring constantly to create a roux.
  4. Make the sauce: Gradually incorporate the chicken broth while whisking to prevent lumps. Once combined, pour in the heavy cream.
  5. Stir until the sauce thickens, which should take about 5 minutes.
  6. Mix in the cooked chicken, peas, thyme, salt, and pepper. Cook for an additional 2-3 minutes. Then, remove from heat and allow it to cool slightly while you prepare the puff pastry.
  7. Preheat your oven to 400°F (200°C).
  8. Roll out the puff pastry sheets on a lightly floured surface if necessary. Place one sheet in the bottom of your pie dish, gently pressing along the edges.
  9. Pour the chicken filling into the prepared crust, spreading it out evenly.
  10. Lay the second puff pastry sheet over the top of the filling. Trim any excess dough and press the edges to seal the pie. Don’t forget to cut a few slits in the top crust for steam to escape.
  11. Brush the top of the pie with the beaten egg for a golden finish.
  12. Bake for 25-30 minutes, or until the puff pastry is golden brown and crispy.
  13. Allow the pot pie to cool for a few minutes before slicing it into portions and enjoying!

Notes

For extra flavor, add fresh herbs like parsley or dill to the filling before baking.
