Description

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • ½ cup all-purpose flour
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ⅓ cup fresh lemon juice (about 2 lemons)
  • ¼ cup capers, drained
  • 2 tablespoons chopped fresh parsley
  • Lemon slices (for garnish, optional)

Instructions

  1. Prepare the chicken: Place the chicken breasts between two pieces of plastic wrap or parchment paper and pound to an even thickness, about ½ inch thick. Season both sides generously with salt and black pepper. Dredge the chicken in flour, making sure to shake off any excess.
  2. Cook the chicken: In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken breasts to the skillet, cooking for 3-4 minutes on each side until golden brown and cooked through. Once done, remove the chicken from the skillet and set it aside.
  3. Make the lemon sauce: In the same skillet, reduce heat to medium and add the remaining 1 tablespoon of butter. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and fresh lemon juice, scraping up any browned bits from the skillet. Bring the sauce to a simmer and cook for about 5 minutes until it slightly reduces.
  4. Add capers and finish: Stir in the capers and return the cooked chicken to the skillet, spooning the sauce over the top. Allow the chicken to simmer in the sauce for an additional 2-3 minutes to absorb the flavors.
  5. Serve: Transfer the chicken to serving plates, drenching it with that delightful lemon sauce. Garnish with chopped fresh parsley and lemon slices if desired. Serve hot and enjoy!
