A quick and satisfying Chicken Pesto Sandwich made with juicy chicken, vibrant pesto, and gooey mozzarella, perfect for lunch or dinner.

- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup pesto
- 4 slices fresh mozzarella cheese
- 4 slices of bread (ciabatta, sourdough, or your choice)
- Fresh basil leaves (optional)
Instructions
- Season the chicken breasts generously with salt and pepper.
- Heat the olive oil in a skillet over medium heat.
- Place the chicken in the skillet and cook for about 6-7 minutes on each side, until fully cooked through.
- Once done, remove the chicken and let it rest for a few minutes before slicing into thin strips.
- Spread a layer of pesto on one side of each slice of bread.
- On two slices, layer the sliced chicken and fresh mozzarella cheese, adding basil if you’re using it.
- Top with the remaining slices of bread, pesto side down, to form sandwiches.
- Grill the sandwiches in the same skillet for around 3-4 minutes on each side, until the bread is golden brown and the cheese has melted.
- Slice in half and serve hot, reveling in the melted, savory goodness!
Notes
For added flavor, marinate the chicken in pesto for an hour before cooking. Pair with salad or fries for a complete meal.
