- 2 cups basmati rice
- 1 whole chicken, cut into pieces
- 3 tablespoons vegetable oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, chopped
- 2 teaspoons Kabsa spice mix
- 4 cups chicken broth
- Salt to taste
- Fresh parsley or coriander for garnish
- Lemon wedges for serving
Instructions
- Start by rinsing the basmati rice under cold water until the water runs clear. Soak it for 30 minutes, then drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Once hot, add the finely chopped onion and minced garlic, sautéing until they soften and become fragrant.
- Add the chicken pieces to the pot, browning them on all sides to lock in flavor.
- Stir in the chopped tomatoes along with the Kabsa spice mix, allowing them to cook together for a few minutes.
- Pour in the chicken broth, season with salt, and bring it to a boil. Reduce the heat to a simmer, cover the pot, and cook for about 25-30 minutes, or until the chicken is tender and cooked through.
- Carefully remove the chicken from the pot and set it aside. Add the soaked rice to the broth, gently stirring it in, and place the browned chicken on top of the rice. Cover again and cook on low heat for about 20 minutes, or until the rice is fluffy and has absorbed all the liquid.
- Fluff the rice with a fork before serving. Garnish with fresh parsley or coriander and serve with lemon wedges for a refreshing finish.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the chicken and rice separately; they can last up to 4 months.
