- 2 boneless skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone)
- 4 slices of bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for grilling the sandwiches
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook for 6–7 minutes on each side until cooked through. Let it rest before slicing.
- Prep the Avocado and Cheese: Slice the avocado and prepare the cheese.
- Prepare the Bread: Spread mayonnaise and Dijon mustard on one side of each bread slice.
- Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado, cheese, red onion, and tomato. Top with remaining slices of bread, mayo side down.
- Grill the Sandwiches: Heat butter or olive oil in a skillet over medium heat. Grill the sandwiches for 3–4 minutes on each side until golden brown and cheese is melted.
- Serve: Let cool slightly, slice in half, and serve warm.
Notes
For a twist, add crispy bacon or substitute with pesto instead of mayonnaise and mustard.
