- 2 cups cooked, shredded chicken
- 2 ripe avocados, diced
- 1 cup cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup corn (frozen or fresh)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 large flour tortillas
- Salsa, for serving
Instructions
- In a large bowl, combine the cooked chicken, diced avocados, cooked rice, black beans, corn, chili powder, cumin, salt, and pepper. Mix until everything is well combined.
- Place the flour tortillas on a clean surface and divide the filling evenly between them.
- Fold in the sides of each tortilla and roll them up tightly to enclose the filling.
- Heat a skillet over medium heat. Place the burritos seam-side down and cook until the tortillas turn golden and crispy, about 2-3 minutes per side.
- Serve warm with your favorite salsa for a perfect finishing touch.
