Description

Delicious and versatile Chicken Avocado Burritos, perfect for busy weeknights or casual family brunch.


Ingredients

  • 2 cups cooked, shredded chicken
  • 2 ripe avocados, diced
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (frozen or fresh)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Salsa, for serving

Instructions

  1. In a large bowl, combine the cooked chicken, diced avocados, cooked rice, black beans, corn, chili powder, cumin, salt, and pepper. Mix until everything is well combined.
  2. Place the flour tortillas on a clean surface and divide the filling evenly between them.
  3. Fold in the sides of each tortilla and roll them up tightly to enclose the filling.
  4. Heat a skillet over medium heat. Place the burritos seam-side down and cook until the tortillas turn golden and crispy, about 2-3 minutes per side.
  5. Serve warm with your favorite salsa for a perfect finishing touch.

Notes
