Description

Delicious and chewy Cherry Icebox Cookies, perfect for summer gatherings and easy to prepare.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped cherries (fresh or maraschino)
  • Optional: Powdered sugar for dusting

Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  2. Beat in the egg and vanilla extract until well combined.
  3. Whisk together the flour, baking powder, and salt in another bowl.
  4. Gradually add the dry mixture to the wet ingredients, mixing gently until just combined.
  5. Fold in the chopped cherries until evenly distributed.
  6. Divide the dough into two equal portions and shape each into a log. Wrap in plastic wrap and refrigerate for at least 2 hours.
  7. Preheat your oven to 350°F (175°C).
  8. Slice the firm dough into 1/4-inch thick rounds and place on a parchment-lined baking sheet.
  9. Bake for 10-12 minutes until edges are lightly golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.
  11. Dust with powdered sugar before serving if desired.
