- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped cherries (fresh or maraschino)
- Optional: Powdered sugar for dusting
Instructions
- Cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the dry mixture to the wet ingredients, mixing gently until just combined.
- Fold in the chopped cherries until evenly distributed.
- Divide the dough into two equal portions and shape each into a log. Wrap in plastic wrap and refrigerate for at least 2 hours.
- Preheat your oven to 350°F (175°C).
- Slice the firm dough into 1/4-inch thick rounds and place on a parchment-lined baking sheet.
- Bake for 10-12 minutes until edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
- Dust with powdered sugar before serving if desired.
Notes
These cookies can be made ahead and stored in the fridge. They also freeze well.
