Description

Delicious Cherry Breakfast Bars featuring sweet Northwest cherries wrapped in a chewy, nutty oat crust, perfect for breakfast or a snack.


Ingredients

  • 1 ยฝ cup rolled oats
  • ยฝ cup flour
  • ยฝ cup light brown sugar
  • โ…“ cup chopped almonds
  • ยผ teaspoon baking soda
  • ยผ teaspoon salt
  • โ…“ cup coconut oil, melted
  • 2 ยฝ cups Northwest sweet cherries, pitted and chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350ยฐ F. Line an 8-inch square baking dish with parchment paper and grease it lightly with coconut oil.
  2. Combine rolled oats, flour, brown sugar, chopped almonds, baking soda, and salt in a large bowl. Drizzle melted coconut oil over the mixture, stirring until everything is well coated.
  3. Mix together the pitted and chopped cherries with lemon juice, maple syrup, and cornstarch in a separate medium bowl. Ensure the cherries are evenly coated.
  4. Set aside 1 cup of the oat mixture. Using your hands, press the remaining mixture onto the bottom of the baking dish.
  5. Pour the cherry mixture over the oat base, spreading it evenly with a spatula to fill in the corners.
  6. Crumble the reserved oat mixture over the cherry layer.
  7. Bake for about 30 minutes or until the top turns a golden brown. Allow the bars to cool completely before removing them from the pan.
