- 1 ยฝ cup rolled oats
- ยฝ cup flour
- ยฝ cup light brown sugar
- โ cup chopped almonds
- ยผ teaspoon baking soda
- ยผ teaspoon salt
- โ cup coconut oil, melted
- 2 ยฝ cups Northwest sweet cherries, pitted and chopped
- 2 tablespoons lemon juice
- 1 tablespoon maple syrup
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 350ยฐ F. Line an 8-inch square baking dish with parchment paper and grease it lightly with coconut oil.
- Combine rolled oats, flour, brown sugar, chopped almonds, baking soda, and salt in a large bowl. Drizzle melted coconut oil over the mixture, stirring until everything is well coated.
- Mix together the pitted and chopped cherries with lemon juice, maple syrup, and cornstarch in a separate medium bowl. Ensure the cherries are evenly coated.
- Set aside 1 cup of the oat mixture. Using your hands, press the remaining mixture onto the bottom of the baking dish.
- Pour the cherry mixture over the oat base, spreading it evenly with a spatula to fill in the corners.
- Crumble the reserved oat mixture over the cherry layer.
- Bake for about 30 minutes or until the top turns a golden brown. Allow the bars to cool completely before removing them from the pan.
