Ingredients

  • 2 teaspoons sugar
  • 2 teaspoons active dry yeast
  • 5 cups all-purpose flour
  • 1/4 cup olive oil
  • 2 teaspoons salt
  • 4 cloves garlic, minced
  • 1 large onion, thinly sliced
  • 1 cup white cheddar cheese, shredded
  • 2 teaspoons fresh rosemary, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a bowl, combine warm water, sugar, and yeast. Let sit until frothy, about 5 minutes.
  2. Combine dry ingredients: In a large bowl, mix flour and salt. Create a well in the center and pour in the yeast mixture and olive oil. Stir until a dough forms.
  3. Knead the dough: On a floured surface, knead the dough for about 10 minutes until it becomes smooth and elastic.
  4. First rise: Place the dough in a greased bowl, cover with a towel, and let rise in a warm spot until it doubles in size, roughly 1 hour.
  5. Caramelize the onions: During the rise, cook onions slowly in olive oil over low heat until golden brown, about 20 minutes. Add minced garlic and cook for an additional minute.
  6. Preheat oven: Set your oven to 425°F (220°C).
  7. Shape the dough: Punch down the risen dough and move it to a greased baking sheet, pressing it into a rectangular shape.
  8. Prepare toppings: Use your fingers to make dimples in the dough. Top it with caramelized onions, garlic, rosemary, and shredded white cheddar. Drizzle with olive oil and season with salt and pepper.
  9. Second rise: Let the dough rest for another 20-30 minutes.
  10. Bake: Cook for 20-25 minutes, until golden brown. Allow it to cool slightly before serving.
