Description

Delicious cheesy chicken tacos made with tender chicken, gooey cheese, and vibrant pico de gallo, ready in under 30 minutes.


Ingredients

  • 1 pound chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons taco seasoning
  • 1 tablespoon olive oil
  • Salt & pepper to taste
  • Flour tortillas
  • Shredded Mexican cheese blend
  • Pico de gallo for topping

Instructions

  1. In a mixing bowl, combine the chicken pieces with taco seasoning, olive oil, salt, and pepper. Toss everything together until the chicken is well coated.
  2. Preheat your air fryer to 375°F (190°C). Cook the seasoned chicken for 12-15 minutes, shaking the basket halfway through, until the chicken is golden brown and fully cooked.
  3. While the chicken cooks, prepare the tortillas. On one half of each flour tortilla, add a generous sprinkle of shredded Mexican cheese. Layer the cooked chicken on top and then fold the tortilla in half.
  4. For an oven finish, place the folded tacos on a baking sheet. Bake at 400°F for 12-15 minutes, or until crispy and the cheese is gooey and melted.
  5. Once out of the oven, top your tacos with fresh pico de gallo and serve warm.

Notes

Consider using corn tortillas for a gluten-free option or adding black beans for extra flavor. For best flavor, marinate chicken for a couple of hours or overnight.
