Delicious cheesy chicken tacos made with tender chicken, gooey cheese, and vibrant pico de gallo, ready in under 30 minutes.

- 1 pound chicken breast or thighs, cut into bite-sized pieces
- 2 tablespoons taco seasoning
- 1 tablespoon olive oil
- Salt & pepper to taste
- Flour tortillas
- Shredded Mexican cheese blend
- Pico de gallo for topping
Instructions
- In a mixing bowl, combine the chicken pieces with taco seasoning, olive oil, salt, and pepper. Toss everything together until the chicken is well coated.
- Preheat your air fryer to 375°F (190°C). Cook the seasoned chicken for 12-15 minutes, shaking the basket halfway through, until the chicken is golden brown and fully cooked.
- While the chicken cooks, prepare the tortillas. On one half of each flour tortilla, add a generous sprinkle of shredded Mexican cheese. Layer the cooked chicken on top and then fold the tortilla in half.
- For an oven finish, place the folded tacos on a baking sheet. Bake at 400°F for 12-15 minutes, or until crispy and the cheese is gooey and melted.
- Once out of the oven, top your tacos with fresh pico de gallo and serve warm.
Notes
Consider using corn tortillas for a gluten-free option or adding black beans for extra flavor. For best flavor, marinate chicken for a couple of hours or overnight.
