- 1 pound ground beef
- 1 package corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup refried beans
- 1 cup corn (optional)
- Chopped green onions for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef until it’s fully cooked and drain any excess fat.
- Mix in the taco seasoning and diced tomatoes, combining well.
- In a baking dish, start layering: begin with some corn tortillas, then add a layer of the beef mixture, spread a layer of sour cream, followed by refried beans, and top with cheese.
- Continue layering until you’ve used all the ingredients, finishing with a layer of cheese on the top.
- Place the casserole in the oven and bake for about 25-30 minutes until the cheese is bubbling and golden.
- Let cool slightly before serving and garnish with chopped green onions if desired.
Notes
Feel free to swap ground beef for ground turkey or use black beans for a vegetarian option.
