Ingredients

  • 1 pound ground beef
  • 1 package corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup refried beans
  • 1 cup corn (optional)
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef until it’s fully cooked and drain any excess fat.
  3. Mix in the taco seasoning and diced tomatoes, combining well.
  4. In a baking dish, start layering: begin with some corn tortillas, then add a layer of the beef mixture, spread a layer of sour cream, followed by refried beans, and top with cheese.
  5. Continue layering until you’ve used all the ingredients, finishing with a layer of cheese on the top.
  6. Place the casserole in the oven and bake for about 25-30 minutes until the cheese is bubbling and golden.
  7. Let cool slightly before serving and garnish with chopped green onions if desired.

Notes

Feel free to swap ground beef for ground turkey or use black beans for a vegetarian option.
