- 1/2 cup unsalted butter (melted, plus more for greasing the loaf pan; 1 stick or 4 oz.)
- 1 cup all-purpose flour (plus more for dusting the loaf pan)
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1/4 cup buttermilk
- 1 teaspoon pure vanilla extract
- 2 large eggs (plus 1 large egg yolk)
- 3 ripe bananas (approximately 480 g or 17 oz)
- 4 oz (113g) cream cheese (softened)
- 2 tablespoons all-purpose flour
- 2 tablespoons sugar
Instructions
- Preheat the oven to 350°F (176°C) and grease and flour a 9″x5″ loaf pan.
- Mash the ripe bananas in a bowl. Set aside.
- Whisk together 1 cup of flour, baking soda, and salt in a large bowl.
- Mix 3/4 cup sugar, melted butter, buttermilk, vanilla extract, 1 egg, and 1 egg yolk in a separate bowl until smooth.
- Pour the wet ingredients over the dry ingredients, stirring until just combined. Gently fold in the mashed bananas.
- Combine the remaining egg, softened cream cheese, 2 tablespoons flour, and 2 tablespoons sugar in a small bowl. Mix until smooth.
- Pour half of the banana bread batter into the prepared loaf pan, layer on the cream cheese filling, and then top with the remaining batter.
- Bake for about 1 hour, or until golden and a toothpick comes out clean.
- Cool in the pan for at least 10 minutes before slicing and serving.
Notes
Ripe bananas are key for maximum sweetness and flavor. Do not overmix to keep the texture light.
