Description

Delicious cheeseburger egg rolls with a crispy exterior and a cheesy filling, perfect for parties or a fun weeknight dinner.


Ingredients

  • 17 Egg roll wrappers
  • 1 lb Ground beef (80/20)
  • 2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 Yellow onion (medium, small dice)
  • 1/2 cup Pickles (diced)
  • 2 cups Cheddar cheese (shredded)
  • Canola or vegetable oil (for frying)
  • 1 Egg
  • 1 tbsp Water
  • 1/2 cup Mayonnaise
  • 3 tbsp Sweet pickle relish
  • 1 tbsp Yellow onion (finely minced)
  • 1 tbsp White vinegar
  • 2 tbsp Ketchup
  • 2 tsp Yellow mustard
  • 1/2 tsp Paprika
  • 1/4 tsp Onion powder
  • 1/4 tsp Salt

Instructions

  1. Prepare the filling: In a skillet over medium heat, brown the ground beef. Add salt, pepper, and diced onions, cooking until the onions are soft.
  2. Mix in the extras: Stir in the pickles and shredded cheddar until well combined. Remove from heat and let cool slightly.
  3. Make the egg wash: In a small bowl, whisk together the egg and water. This will help seal your egg rolls.
  4. Assemble the egg rolls: Lay an egg roll wrapper on a flat surface. Spoon a generous amount of the beef mixture into the center. Fold the sides over and roll tightly, sealing with the egg wash.
  5. Fry the rolls: Heat the oil in a deep skillet. Carefully place the egg rolls in hot oil and fry until golden brown, about 3-4 minutes on each side. Drain on paper towels.
  6. Make the sauce: In a bowl, combine mayonnaise, relish, minced onion, vinegar, ketchup, mustard, paprika, onion powder, and salt for a delicious dipping sauce.
