Description

Delightful whoopie pies made with spiced carrot cake and rich cream cheese filling.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 cups finely grated carrots
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, baking powder, cinnamon, and salt in a medium bowl.
  3. Cream together the softened butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy.
  4. Add in the eggs, grated carrots, and 1 teaspoon of vanilla extract, mixing until well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Drop batter onto the prepared baking sheet, ensuring there’s enough space between each scoop.
  7. Bake for about 12-15 minutes, or until a toothpick comes out clean when inserted into the center.
  8. Cool the whoopie pies completely on a wire rack.
  9. Prepare the cream cheese filling by beating together the softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth.
  10. Spread or pipe the cream cheese filling onto the flat side of one pie and sandwich with another pie.
