- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 cups finely grated carrots
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, baking powder, cinnamon, and salt in a medium bowl.
- Cream together the softened butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy.
- Add in the eggs, grated carrots, and 1 teaspoon of vanilla extract, mixing until well incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop batter onto the prepared baking sheet, ensuring there’s enough space between each scoop.
- Bake for about 12-15 minutes, or until a toothpick comes out clean when inserted into the center.
- Cool the whoopie pies completely on a wire rack.
- Prepare the cream cheese filling by beating together the softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth.
- Spread or pipe the cream cheese filling onto the flat side of one pie and sandwich with another pie.
